This position as a Chef De Partie / Senior Chef De Partie will report to the Sous Chef / Senior Sous Chef / Executive Chef.

This upcoming new restaurant is located at the central area of Singapore.

Job Responsibilities:

• Prepare dishes in assigned section while ensuring quality and safety standards are met
• Follow standard recipes and guidelines for food presentation, production, and portioning controls
• Manage proper storage and labelling of food products to minimize spoilage and food wastage
• Maintain the highest standards of kitchen and food hygiene at all times
• Any other duties as assigned

Job Requirements:

• 3 to 5 years of relevant experience preferably in Fine Dining
• Possess comprehensive knowledge of your specialty such as handling kitchen equipment and general culinary functions
• Prior experience working in a pre-opening team would be advantageous
• Be dependable and work well as part of a team
• Possess good communication and interpersonal skills
• Possess a strong understanding and execution of Hazard Analysis Critical Control Points (HACCP)
• Comfortable with flexible work hours including shifts, split shifts, weekends, and public holidays

Summary

Duties and Responsibilities

• Prepare Mise-en-place

• Prepare food items in accurate and standard portion and quantities.

• Prepare meals as directed and according to recipe, menu specification and expected standard.

• Attend to any last-minute additional meal order or menu changes due to flight delay.

• Ensure all prepared foods are properly labelled with Day Sticker.

• Ensure meals are prepared according to Work Order timings and are blast chilled accordingly.

• Ensure personal and food hygiene practices are followed accordingly to standards set by Quality Assurance Department.

• Maintain general cleanliness in the Kitchen area and as well as the equipment for Kitchen use.

• Observe and practice safety rules and regulations.

• Ensure food temperatures are within standard limits.

• Ensure meals are prepared according to specifications.

• Minimize wastage during food preparation.

• Inform immediate superior if any equipment or utensils are damaged or not working.

• Undertake any other duties assigned by immediate superior.

• Ensure compliance with all workplace safety, security, and health policies and procedure

• Perform any ad-hoc duties as assigned by the reporting manager or department head

Job Responsibilities:

• Prepare high-quality roasted and BBQ meat dishes for à la carte, weddings, and banquet functions.
• Ensure all dishes meet hotel standards in taste, presentation, and consistency.
• Manage daily kitchen operations, including food quality, menu execution, and service efficiency.
• Control food costs through proper portioning, minimizing waste, and monitoring spoilage.
• Supervise preparation, portion control, and presentation of BBQ and roasted items.
• Maintain strict hygiene, sanitation, and cleanliness of kitchen, equipment, and workstations.
• Inspect incoming goods and ensure they meet hotel quality specifications.
• Collaborate with stewarding and other departments to maintain cleanliness and smooth operations.

Job Requirements:

• Minimum 6 years’ experience in Chinese BBQ cuisine, preferably in hotel or large-scale kitchen environments.
• Relevant certifications: Food Safety (FSC Level 1/WSQ), HACCP, and First Aid.
• Strong ability to work in fast-paced, high-pressure kitchen operations.
• Capability to manage multiple priorities and tasks simultaneously.
• Experience in supervising, training, and guiding junior kitchen staff.
• Good knowledge of food safety, hygiene, and regulatory compliance.
• Strong attention to detail in food quality, presentation, and consistency.
• Effective communication skills (both written and verbal).

Required competencies and certifications

• Proven work experience as a Restaurant Manager, Restaurant General Manager, or similar role

• Extensive food and beverage (F&B) knowledge, including the ability to recall ingredients and dishes to inform customers and staff
• Familiarity with restaurant management software
• Strong leadership, motivational, and people management skills
• Acute financial management skills
