Job Overview:

As the Senior Cook, you will play an important role in managing and executing the food preparation and cooking processes. You will ensure that all dishes are prepared to the highest standards, manage staff, manage processes, maintain cleanliness, and oversee food safety practices.

Responsibilities:

• Lead and oversee all kitchen operations in a fast-paced environment.
• Prepare, cook, and present high-quality food in accordance with our recipes and menu standards.
• Manage inventory and ensure proper storage of ingredients and supplies.
• Maintain cleanliness and organization of the kitchen area, adhering to all safety and hygiene standards.
• Train and supervise kitchen staff to ensure efficient performance and high-quality food production.
• Monitor food stock levels and order supplies when needed to avoid shortages.
• Maintain consistent food quality, portion control, and food presentation.
• Handle food preparation during peak hours to meet customer demand while maintaining quality.

Requirements:

• Proven experience as a cook, with at least 3 years in a senior cooking position.
• Strong culinary skills, with an eye for detail and a passion for food quality.
• Knowledge of food safety and sanitation standards.
• Ability to lead, manage, and motivate a team in a fast-paced environment.
• Excellent organisational and multitasking skills.
• Strong communication skills and the ability to work well with others.
• Ability to work under pressure and handle high-volume service times.
• Able to accept a flexible working schedule, including evenings, weekends, and holidays as required.

Core Duties and Responsibilities

• Food Preparation & Cooking: Prepare ingredients by washing, peeling, chopping, and marinating, and cook dishes according to recipes across multiple culinary styles.
• Menu Variety: Handle diverse cooking techniques—such as baking, roasting, and steaming—for varied cuisines (e.g., Italian, Asian, Continental).
• Kitchen Operations: Manage multiple orders simultaneously while ensuring prompt service, especially during peak hours.
• Hygiene & Safety: Maintain clean workstations, sanitize tools, and adhere strictly to food safety and health regulations.
• Inventory & Storage: Monitor inventory levels, store food at correct temperatures to avoid spoilage, and report ingredient shortages.
• Plating & Presentation: Ensure consistent, high-quality, and visually appealing food presentation before serving. 
• Key Requirements
• Versatility: Ability to quickly switch between different cuisine styles.
• Technical Skills: Proficient in using various kitchen machinery (ovens, grills, fryers).
• Teamwork: Assisting other chefs and staff to ensure smooth kitchen operations.

• Working Location: Central – 313 Somerset (Nearest MRT: Somerset) / South – Anchorpoint (Nearest MRT: Queenstown) / West – West Coast (Nearest MRT: Clementi) / East - Parkway Parade (Nearest MRT: Marine Parade MRT) – Choose either one workplace
• Working Hours: 5.5 days, Off day falls on weekday (1.5-2 hours lunch break)
• Salary Package: Gross Salary up to SGD 3000 (Up to SGD 2700 + OT) + Variable Bonus
• Duration: Permanent

Key Responsibilities

• Handle a wide range of raw fish and other ingredients
• Bake, grill, steam and deep-fry meats, vegetables, fish, poultry and other foods
• Prepare ingredients for menu items and ensure adequate quantity to avoid wastage
• Ensure food portions and food presentation meet company standards
• Ensure ingredients and final products are fresh
• Monitoring supplies and re-ordering stock as needed
• Packing and labelling of sashimi
• Maintain a clean and safe work area, including handling utensils, equipment and dishes
• Handle and store ingredients and food at the correct temperature in order to avoid spoilage
• Maintain food safety and sanitation standards
• Monitor and train subordinates to obtain good-quality skills and performance
• Welcome and bid farewell to customers as part of an open-concept restaurant environment
