Job Duties:

Overall in charge of kitchen operations

• Procurement, selection, inspection and preparation of ingredients
• Cut various meats and vegetables as per established specification
• Track inventory stock in kitchen and conduct daily order
• Cleans food preparation areas as determined by law and company policy
• Prepares food to the specifications of the client
• Prepares food before the arrival of guests
• Makes adjustments to food items to accommodate guests with allergies or specific diet concerns
• Manage other employees in kitchen
• Acts as liaison to front-of-house employees to ensure proper food service temperature
• Seasons food according to recipes or company needs
• Orders ingredients and spices as needed
• Operates various kitchen appliance such as a blender, oven, grill
• Portions, arranges, and garnishes food based on client preference
• Direct and lead the food assembly process
• Conduct regular inspections to ensure consistency in standards of food preparation, food presentation, cleanliness and sanitation of restaurant and kitchen equipment

Job Requirements

• At least 5 years' experience in western cuisine
• Good experience in western cuisine kitchen operation
• Knowledge of good hygiene practices
• Willing to work long hours and OT when required
• Understand western spices well

Job Summary:

Education:

Ability to analyze data and market trends effectively.

Job Responsibilities

1. Prepare and handle preparation of cold food

2. Prepare and handle preparation of hot food

3. Prepare raw ingredients as per SOP

4. Prepare cooked and partial finished product as per SOP

5. Assembling product as per SOP

6. Food Preparation for Delivery/Catering Guests

7. Food Preparation for quantity ordered by the outlets

8. Packaging of food as per SOP for delivery purpose

9. Maintain a high level of hygiene standards

10. Maintain equipment cleanliness and overall kitchen cleanliness

11. Assist to Manage Inventory level inside the facility

12. Assist to Manage Ordering inside the facility

13. Follow the rules and regulations of the company policy and facility location policy

Preferred Skills

1. Previous work experience inside Kitchen would be a plus point

2. Chopping/Cutting/Slicing of ingredients (Vegetables and Protein)

Process invoices, payments, and expense claims

Assist with bank reconciliations and month-end closing

Manage filing, correspondence, and office supplies

Coordinate document signing and administrative tasks

Support the team with ad-hoc duties as needed

Diploma in Accounting, Business, or related field

1–2 years of relevant experience

Proficient in Microsoft Excel and accounting software

Job Description

Central Kitchen Manager manages the overall performance of an organisation's central kitchen. Besides monitoring production output levels to ensure that quality levels are maintained, he is also expected to have a hand in setting up new food production standards and kitchen operation guidelines, as well as support research and development activities.

1. Manage central production operations

2. Manage compliance with food and beverage hygiene policies and procedures

3. Manage high volume food production operations

4. Manage non-compliant quality cases

5. Monitor production output levels. manage inventory, monitor stock levels and conduct regular stock take

6. Maintains high standard of hygiene, follows relevant safety regulations, in accordance with current regulations

7. Ensure sufficient supply of ingredients for food preparation

8. Arrange & transfer supplies & equipment between storage and work areas, in accordance to Workplace Safety

Requirements
