Overview:
We are hiring for a organic concept at Dempsey that combines a grocery store and retail experience focused on premium, high-quality products. This space will offer curated meats, produce, and artisanal goods for discerning customers who value provenance, freshness, and craftsmanship.

The Retail Butcher will play a key role in ensuring product quality and customer satisfaction from day one.

Responsibilities

• Cut, trim, bone, and portion various meats (beef, pork, lamb, poultry, etc.) according to retail specifications and customer preferences.
• Ensure consistent quality, proper handling, and attractive presentation of all meat products.
• Prepare and package meat products with accurate labeling (cut type, weight, expiry date, etc.).
• Maintain cold chain integrity and adhere to food safety standards at all times.
• Provide product knowledge and basic cooking advice to customers when needed.
• Assist in inventory control, stock rotation, and order preparation for both the retail and foodservice arms.
• Uphold cleanliness and sanitation standards across all work areas, including butchery equipment.
• Support the retail team during peak periods, including assisting with general store duties as needed.

Qualifications

• Proven experience as a butcher in a retail, supermarket, or specialty grocery setting.
• Skilled in meat processing and use of butchery tools (knives, saws, grinders).
• Familiar with retail display standards, portioning, and vacuum sealing.
• Valid Food Hygiene Certificate (minimally Level 1).

This is a pivotal role where your expertise will shape our baking programme, elevate product quality, and inspire a team of talented bakers. This role goes beyond managing daily production. You will set standards, ensure consistency, and play a key part in building team culture while contributing to the long-term growth and reputation of one of Dempsey’s most exciting destinations. 

What You’ll Be Doing 

• Run daily baking operations and make sure everything in the kitchen runs smoothly.  

• Ensure all baked goods meet high standards for quality, taste, and consistency, while being commercially viable.  

• Create and maintain recipes, standard procedures, portion sizes, and presentation guidelines.  

• Manage costs, ingredients, and inventory to keep the kitchen efficient and profitable.  

• Monitor production and find ways to improve speed, efficiency, and quality.  

• Source ingredients, manage supplier relationships, and negotiate prices for flour and other bakery supplies.  

• Follow all health, hygiene, and safety regulations in the kitchen.  

• Reduce waste and optimize workflow and processes in the bakery.  

• Train, mentor, and guide junior bakers and kitchen staff.  

• Encourage teamwork, accountability, and a culture of excellence.  

• Regularly taste, audit, and review products to maintain high standards.
