Job Responsibilities:
Production Output & Yield
- Oversee and drive daily production targets, ensuring volume commitments are met each shift
- Monitor and control yield at every processing stage —minimising waste and trim loss across deheading, portioning, skinning, and packing lines
- Conduct pre-shift planning: confirm raw material readiness, assign workers to stations, and verify equipment is operational
- Track line throughput in real time and adjust workflow or staffing to recover pace when targets are at risk
- Ensure products are processed, packed, and transferred to cold storage per specification and customer requirements
- Coordinate with the cold chain team on blast freezer loading schedules and storage capacity
Machine Operation & Oversight
- Supervise the operation of semi-automated processing equipment, including: blast freezers, descaling, deheading, portioning, slicing machines and packing machines such as thermoform and skin-pack
- Identify and escalate machine faults, abnormal sounds, or output quality deviations promptly
- Ensure pre-operation checks and basic first-line troubleshooting are performed by operators before each shift
- Liaise with the maintenance team for scheduled and corrective maintenance; minimise unplanned downtime
People Management
- Lead, supervise, and motivate a team of production workers on the night shift and conduct briefings
- Assign workers to appropriate stations based on skill level, production needs, and individual capability
- Train and onboard new workers on machine operation, food safety practices, and standard operating procedures
- Monitor worker performance and attendance; addressnon-conformances or discipline issues promptly and fairly
- Foster a cooperative and productive team environment; resolve interpersonal conflicts on the floor
- Provide regular performance feedback and escalate persistent issues to the Night Operations Manager
Quality, Hygiene & Food Safety
- Ensure all products meet quality specifications in cut, weight, appearance, and packaging integrity
- Enforce compliance with food safety standards (e.g.HACCP, SFA requirements) throughout the shift
- Ensure hygiene protocols are followed — including proper PPE use, handwashing, and cross-contamination prevention
- Oversee sanitation and equipment cleaning at shift changeover; confirm the plant is in acceptable condition before handover
- Segregate and report substandard or non-conformingproduct; prevent release of defective goods
Workplace Safety
- Enforce Workplace Safety and Health (WSH) standards across the production floor at all times
- Conduct toolbox briefings on safety topics relevant to tonight's shift operations — wet floors, knife handling, cold environments, machine guarding
- Respond to and report any incidents, near-misses, or injuries in accordance with company procedures
- Ensure workers are not fatigued to the point of safety risk; manage breaks and rotation appropriately
Reporting & Handover (Minimal Administration)
- Complete an end-of-shift production summary: output volume, yield, headcount, and key issues encountered
- Conduct a clear verbal and written handover to the incoming shift supervisor
- Flag supply shortages, equipment concerns, or quality deviations to the Night Operations Manager promptly\
Job Requirements:
- Minimum 5 years of experience in a food manufacturing, seafood processing, or related production environment
- Prior supervisory or team-lead experience preferred; strong operators with demonstrated leadership will be considered
- Hands-on experience with semi-automated production machinery is advantageous
- Familiarity with seafood species handling, cold chain management, or wet processing is a strong plus
- Ability to lead and communicate effectively with a Mandarin-speaking workforce
- Strong floor presence — this is not a desk role; must be comfortable standing and working in cold, wet environments for extended periods
- Physically capable of handling seafood products and working on wet floors in cold storage conditions
- Problem-solving mindset with the ability to respond decisively to production disruptions
- Reliable, disciplined, and able to maintain team morale and focus during night shift hours
- Basic numeracy for tracking output volumes, yield percentages, and portion weights
- Working knowledge of food safety and hygiene principles (HACCP awareness preferred)
- Willing and able to work permanent night shift
