JOB OVERVIEW:

We are seeking dedicated and flexible Kitchen Assistants to join our dynamic kitchen team. This is an exciting opportunity to support the kitchen staff and ensure smooth operations during service. You will work alongside experienced cooks to prepare food and maintain high hygiene standards while contributing to the success of the kitchen.

DUTIES & RESPONSIBILITIES:

Assists Management

1. Communicate with guests, other employees, or departments to ensure guest needs are met.

Closing

1. Complete closing duties, including storing all reusable goods, breaking down goods, cleaning all equipment and areas, returning equipment to proper locations, locking refrigerators, restocking items, turning off lights, locking doors, and completing daily cleaning checklist.

Beverage/Coffee Cart

1. Inspect the cleanliness and presentation all china, glass, and silver prior to use.
2. Prepare drink orders for guests according to specified recipes using measuring systems.
3. Maintain cleanliness and condition of bar, bar unit (CO2 lines, soda tanks, soda guns, drain, etc.), tables, and other tools, following all set-up guidelines.
4. Requisition all necessary supplies, specifically bottle-for-bottle liquor restock, transporting supplies from storeroom to bar set-up area as required.

Banquet

1. Set tables according to type of event and service standards, including types of linens, glassware, plate/chinaware, and silver/flatware, ensuring all supplies meet quality standards.
2. Prepare coffee breaks, carts, and stations with appropriate food and beverages as stated in Banquet Event Order.
3. Prepare tables, action stations, buffets, service carts, dessert table/carts and cordial carts with specified tools, wares and equipment according to company standards.
4. Set up, operate, and troubleshoot audio-visual (AV), projection, lighting, and conferencing equipment, devices, and systems, ensuring all equipment is operational prior to use.
5. Bus tables by removing and separating tableware, plateware, glassware, and flatware.
6. Monitor tableware to ensure it is presentable to guests, including checking for cleanliness, cracks, and chips.
7. Break-down, remove, and secure AV equipment and related equipment, devices, and systems promptly following an event.
8. Respond to and try to fulfill any special banquet event arrangements requested by guest.
9. Replenish buffet items to ensure consistency and freshness in presentation from opening to closing.
10. Follow up on special banquet event arrangements requested by guest to ensure compliance.
11. Assist and instruct guests/customers regarding proper usage and operation of AV equipment and Internet.
12. Inspect the cleanliness and presentation all china, glass, and silver prior to use.

In-Room Dining

1. Take room service orders over the phone, answering any questions regarding the menu, inputting order into appropriate system, up-selling, following method of payment policies, reading back the order to confirm its accuracy, and providing expected delivery time.
2. Place and log call back for room service order within appropriate time frame to ensure guest satisfaction.
3. Notify guests and management of delays in service delivery and record any issues or complaints via GXP system.
4. Deliver VIP amenities and F&B orders to guest rooms and suites as per sequence of service and standard.
5. Collect, clear and remove trays and trolleys from corridors and guest rooms

Cash/Bank Handling

1. Process all payment methods in accordance with Accounting procedures and policies.
2. Follow property control audit standards and cash handling procedures (e.g., blind drops).
3. Count bank at end of shift, complete designated cashier reports, resolve any discrepancies, drop off receipts, and secure bank.
4. Obtain assigned bank and ensure accuracy of contracted monies, obtaining change required for expected business level, and keeping bank secure at all times.
5. Transport bank to/from assigned workstation, following security procedures.
6. Set up and organize cashier workstation with designated supplies, forms, and resource materials; and maintain cleanliness of workstation at all times.
7. To ensure and follow established procedures and compliance as per LSOP guidelines.

Steps of Service

1. Present physical and accurate check and process payment, adhering to all cash handling and credit policies/procedures including added and received gratuity.
2. Check in with guests to ensure satisfaction with each food course and/or beverages.
3. Answer questions on menu selections, and check with kitchen staff whenever additional clarification is necessary.
4. Communicate with the kitchen regarding the length of wait for food items, recook orders, and product availability.

Any other duties as may be assigned from time to time.

Job Requirements

• Candidate must possess at least a Professional Certificate/NiTEC, any field.
• Previous F&B experience is a big plus. Fresh graduates are welcome too.

Reporting to the Restaurant Manager, your job responsibilities include, but not limited to:-

Responsibilities

• Handle guest enquiries and staff challenges whenever the need arises.
• Responsible for inventory-count and the requisition of mise en place and equipment.
• Support the establishment with cost-saving measures such as avoiding breakages.
• Handle the RSVP manifest, leading guest and allocate seats for guests at the podium.
• Welcome guests at reception, build rapport with the patrons and extend fond farewell at the end of their patronage.

Requirements

• Able to work on weekends.
• Able to work split shifts.
• Able to accommodate to rotating off days (no fixed day of the week).

Responsibilities

• Provides guidance for all aspects of the kitchen’s day-to-day operations that precludes the management of food hygiene and safety, enforcing performance and quality standards, and monitoring to ensure attainment of these goals
• Controls and directs the food preparation process efficiently and professionally
• Creates meals using new or current culinary inventions or as the business prescribes
• Approves and polishes dishes before they are delivered and served to customers
• Produces quality menu that could change seasonally as the business requires
• Manage, train and educate kitchen workers to be par with the highest possible culinary standards
• Manages kitchen stocks and ensures minimal wastage
• Forecasts and assesses personnel requirements ensuring no shortage or excess of kitchen staff while keeping labor costs in control
• Procures, stores, and handles all food products and materials within the agreed-upon budget and maximizes gross profit to include the effective staff management and payroll expenses
• Ensures that base food preparations and mise en place are well organized for service, allowing smooth kitchen operations
• Maintains payroll, punctuality and attendance records
• Follows and strictly implements all food and sanitary rules as well as safety guidelines
• Keeps updated in the latest trends in culinary trends and kitchen processes and technologies
• Ascertains that the personnel follow the regulations on hygiene, stock rotation, dates, storages, refrigerator temperature control, pest control, reporting of malfunctioning equipment, reporting of notifiable illnesses, and reporting of absenteeism, whether due to illness or otherwise
• If and when necessary, keeps recipe files in excellent condition and up-to-date

Qualifications & Requirements

• Associate or Bachelor’s Degree in Culinary Arts or Science, Business, or relevant fields
• At least 5 years of experience as a chef
• Completed the WSQ Basic Food Hygiene Course – Food Safety Course Levels 1 and 2
• Proven ability of kitchen management
• Strong interpersonal and leadership skills
• Tenacious in picking up concepts and possesses strong logical and analytical problem-solving skills
• Good understanding of computer software such as POS, restaurant management system, and Microsoft Office

Responsibilities

• Assists the Head Chef in carrying out all aspects of the kitchen’s day-to-day operations that precludes the management of food hygiene and safety, enforcing performance and quality standards, and monitoring to ensure attainment of these goals
• Helps control and direct the food preparation process efficiently and professionally
• Ensures that the kitchen runs on schedule and that food and related services are of a high grade
• Supports the Head Chef in planning and coordinating tasks while keeping labor expenses in mind
• Helps create meals using new or current culinary inventions or as the business prescribes
• Approves and polishes dishes before they are delivered and served to customers
• Produces quality menu that could change seasonally as the business requires
• Places equipment, tools or ingredient orders in response to possible detected shortfalls
• When directed by the Head Chef, hires, manages, trains and educates kitchen workers to be par with the highest possible culinary standards
• Follows and strictly implements all food and sanitary rules as well as safety guidelines
• Assists in the preparation of duty rotas for kitchen staff to provide appropriate coverage at all times while accounting for the seasonality of the business and keeping overtime to the minimum
• If and when directed by the Head Chef, keeps recipe files in excellent condition and up-to-date

Qualifications & Requirements

• Associate or Bachelor’s Degree in Culinary Arts or Science, Business, or relevant fields
• Three (3) years of experience as a sous chef
• Completed the WSQ Basic Food Hygiene Course – Food Safety Course Levels 1 and 2
• Updated in control of substances hazardous to health (COSHH) regulations or hazard analysis critical control point (HACCP) methods
• Completed the WSQ Basic Food Hygiene Course – Food Safety Course Levels 1 and 2
• Quick in picking up concepts and possesses good logical and analytical problem-solving skills
• Able to grasp business requirements and processes
• Good understanding of computer software such as POS, restaurant management system, and Microsoft Office
